I owned a moped and used to get to ride pillion on my dad's old GSXR750 and Hayabusa. I don't know about even my Mustang feeling like a moped compared to those two bikes, although they do have some amazing acceleration!
However, I'd love a bike to track, to have for road use is a bit of a worry as the driving test here is lacking so much, I'd rather be hit by somebody on the road not checking their mirrors in a car than on a sports bike...

Just remember ... the more power that you add ... the more you will need to control that power.
Just wanted to make sure you thought that out as well. No use in a high HP car if just spins the tires.

EDIT: That's not to say just go out and drive 150mph. You need to know how to handle the car first. They have their own personalities. But I won't sit here and have someone tell me 100mph is enough just because its a big V8 muscle car.

College student to college student, do mods a little at a time. Don't go broke doing mods on a car that's already nice. And one thing I've noticed is you haven't addressed on your list is suspension. That should be priority before you consider big power

The stock mustang GT suspension is pretty sloppy and in stock form your assessment of >140 is pretty accurate, but do swap the sways, springs, and dampers and balance the tires and it's smooth and grounded, 140 feels about like 70.
To the OP, not likely to get close to the 600 number with the mods you have listed. change out the shorties to long tubes, bore & sleeve the block to a 5.4 and go with better rods and bolts so you can push the redline up then maybe???
