I just want to make sure I am doing it right.

I want to purchase koni orange and Ford Racing GT500 Style Strut Mount. I already have levering springs and panhard bar.

I have 2013 V6 convertible. So my question is do I need to purchase 05-10 koni orange instead of 11-14 in order to use GT500 strut mounts??

You need the shocks/struts that are compatible with the model year of your car. You need 11-14 Shocks/struts. The GT500 strut mounts are compatible with all years 05-14. BTW, I have Koni Orange, and absolutely love the way the car feels. Its perfect for daily driver.

The M-18183-C GT500 strut mounts will fit a 2011-2014 GT, but you must use 2005-2010 struts with them. A 2011-2014 GT strut has a different diameter shaft that doesn't fit the mount.

Per LMR:"Original equipment on the 2011 SVT Shelby Cobra Mustang Track Pack, these strut mount upgrades fit all 2011-2014 Mustang V6 & GT when using 2005-2010 front struts. Will not fit 2011-2013 Mustang using stock 2011-2012 struts. Direct replacement upgrade for 2005-2010 Mustang GT & V6."

I went with the 2005-2010 style Koni Yellows with these GT500 strut mounts on my 13'.

Aslo FWIW, if you mount those strut mounts 180 degrees out (arrows point AWAY from the motor instead of toward it), your camber will be within spec without the need for Camber bolts or plates.
