The size of the tire will depend on the size of the rims you will be using.
I'm no tire expert, buy I just put 275's on an 18x10 rim and there's plenty of clearance.
I've heard of people running 295's on 20" rims without an issue, but I'm not sure going any bigger/wider would be a good idea.
You can always call someone like American Muscle to get some professional advice. It's well worth the 5 - 10 minutes of time.

I've heard people going as wide as a 305mm in the rear without rubbing... obviously getting the right offset on the wheel is the key here.
I've heard that 285s have been run on the front (again with the correct offset), but you will get trammeling with anything wider than 255mm.
The sidewall ratio will vary based on the diameter wheels you go with.
