I just recently had a 351w windsor rebuilt and bored with edelbrock everything. You will need to update your cooling system in a 66 since the engine upgrade will run hotter than a 289. New radiator, and electric fan for a 66 is about 600 bucks alone. My setup cost around 6000 to install a bored 351w in a 65 coupe. a 408 will be about a grand or two grand more.

I ran...
1. stock 2-core radiator
2. 195F t-stat
3. stock replacement style WP
4. a cheap clutchless, mechanical fan
My coolant temps were always dead on 200F
You won't have any cooling issues with a 408w, that you wouldn't have with a 302.

it all comes down to budget, if you can afford the stroker then it's a no brainer. more cubes equals more torque. i have a 358 and don't get me wrong i love it but i've been gathering parts for my 408 build. in this case then bigger really is better

If you're going to go through the trouble of getting your block freshened up - you might as well go the full length and do a 408. I can't see a reason why not to, honestly. Think about it this way; you're going to enjoy the power you get, but you're always going to ask the "what if it was a ____ instead" so why not just move straight up to that point so you're not curious to tear everything apart and end up wasting alot of money that you could've saved.
- and this is assuming you can afford the complimenting parts to a 408. If it were me (and this DOES apply to me, as I also have a 351 block waiting) I'm saving up and doing it once. I don't want to come back and do it again because I wanted to save a few extra dollars. There is no such thing as a budget-build if you want to get excellent performance if you ask me.
