Throw a 75 or 100 shot of nitrous on there and you'll have them 
And I will disagree on the Mach 1 engine being closer to the Cobra than the GT. GT = 2v, Mach = 4v, Cobra = Supercharged 4v... The power gap is bigger between the Mach and Cobra than it is between the GT and the Mach.
If you can launch well from a dig with those 4.10's, you will be ahead, and should be able to keep ahead of them.
UDP's will help, but will not make the difference. A PI swap, or nitrous will work wonders.

the only cobra's that are s/c are the 03/04 ones. i realize the mach is closer to the 03 gt than the 03 cobra but i was talking about earlier cobra's

With all my bolt on's (no nitrous) I beat a Mach 1 and a 99 Cobra in one night, I dont know what yr the mach 1 was but i barely beat both of these cars, it was 0-120 mph and i was mabye a 1 or 2 feet in front of each of them, the cobra was stock w/ a k&n, but i dunno about the mach 1 prob stock too.
