Yeah def go 18ins, the 17ins look ok but my buddy has an 02 gt with the same rims except there 18s and it looks way better.

you can fit 275's on the stock bullitt rim. i have 4 of the nitto nt 555's. Pretty good tires got them from discounttiredirect.com for 675 to my door.

My suggestion:

17x9 Front Black Bullitts with 245/45/17's
17x10.5 Rear Black Bullitts with 315/35/17's

That is the next mod for my '02 GT (as soon as they're off back order! [:'(])
