Default A/F on an EGT gauge?

I was talking to a guy who recommended using an exhaust gas temp gauge to keep an eye on a/f ratio, after the car is tuned and hte a/f is set and verified on the dyno. I am not going to the strip or any kinda racing, just dd. He was saying that he didnt have any faith in any of the a/f gauges with teh exception of some 600 job. temp goes up during daily driving, running lean, temp down, running rich (over simplified). any of this hold water?
