with my tuner it only allows me to adjust mya/f at part and full throttle. no generic a/f ratio

Since I know nothing about tuning or air/fuel ratios, if I buy a tuner, should I have a shop do their thing instead of getting some kind of can tune?

Get a dyno tune. Skip canned tunes.

You aren't really in need for one, but unless you bought the car new, you never know what was done to it before you got it.
