Default Predator Tuner

OK. So I got this predator tuner and an air tofuel ratio gauge. I put on a few mods and figure out where my A/F goes whacky then go home and adjust accordingly to keep my A/F around 13. I also adjust my timing and all the other little things IE:Traction on/off, speed limiter so on and so forth. So aside from this what does a real "tuner" do at the dyno that is different. Don't get me wrong I am not saying they are not needed but before I go pay 75$ an hour for a dyno tune what is it that they are able to do differently? Thanks in advance.

first of all 13:1 is too lean even for a NA car, i believe that 12.5 is ideal for NA and 11.5 - 11.7 for FI
