Complete paint jobs start at $2000. I wouldn't advise, though, changing the color of you car unless it is factory black. Otherwise, whenever you open the hood of your car, all your friends will laugh at you because it is acompletely different color under there. Black, however, is much more acceptable because everything up to the 70's had a black engine bay. I think even older Ferraris are black inside the door jambs and such...

Take them off like any other emblem. Heat them upwith a blower dryer or heat gun if you have access to it and then get either fishing line or dental floss and work it slowly behind the emblems.

Changing color is no big deal, just have to have a body shop that knows how to do it properly.
You could mask around the GT badges on the fender and paint them on the car as well. The difficultly isn't removing them, it will be putting them back on.

I dont know about anyone else but I wouldnt want a putty knife uf against my paint, especially without heating the emblem up.
Double sided tape/vinyl stripes can pull paint up in some cases if you dont heat them up first.
