Default how to properly degree the cams

How do you "properly" degree a set of cams in our cars? What does this even mean, lol. What are the benefits of doing this vs just timing it the way the stock cams were? what about something like adjustable cam gears?

My assumption for installing cams would be make a mark on the cam gear with the corresponding link of the chain before removal. Since the cam gears only bolt on one way, put that same mark on the same link, and thats it. What am I missing?
