The general idea of a switch like that is to place it in the middle of some line that when the switch is in the off position that line loses its ability to carry its power/signal that it needs to...
to cut the car off you would more likely want to connect your switch into the powered wire that is on when the key is in the "RUN" position this would mean that the switch will not only keep your car from starting but can also act as a kill switch
keep in mind i myself have never done nor do I know this is a 100% safe thing to do, it is just a idea based on what i know of electronics
