Sure you can, however if the short term fuel trims cannot compensate for the larger injectors you'll run rich and throw a code; in open loop it will likely run rich as heck...
So-called "calibrated" MAFs are a kludge to allow one to run higher capacity injectors with a stock tune. They are a left-over from the early EFI days when you could not conveniently (or at all) alter a tune to properly configure "larger" injectors.
In the 21st century you can use any MAF you like, as long as it doesn't peg (which the OEM MAF on a 2001+ GT won't with any n/a configuration), with any injectors you like--all you need to do is set the low and high injector slopes in the tune to match the injectors you plan on running.
