Just get new heads. If the engine you're getting is a long block it has new heads on it.
As for the five speed, not to much work involved you will need a clutch, flywheel, and a set of pedals from a car that has a five speed in it you can get the flywheel and pedals from a scrap yard or pick-a-part.
If your getting an engine with out heads I wouldn't put the old heads on kind of defeats the purpose of getting it. A timesert or helicoil is more of a temporary fix.
