would a 2001 Mustang GT MAF sensor work on a 2000?????

I'd be lying if I said I knew for sure, but I can't see any reason why it wouldn't.

Probably so because the 2000's and 2001's both have 19 lb injectors and the air temp is located on the plenum side of the MAF, not incorporated like the 2002+ models. 2002+ models have a different air temp sensor and have 21lb injectors.
