Those settings are too low, the fan will run all the time. A 180°F thermostat begins to open at 180° and is not fully open until 195°-200°. Also, in NJ in the winter, the engine will run too cold with those settings

The OEM turn on settings, for the stock 195°F thermostat (fully open at 219°F), are 214/208°F on/off for low speed, and 228/224°F on/off for high speed.

So, knocking 15° off those values we get 199/193 for low speed on/off, and 213/209 for high speed on/off.

I have mine (also a 180° t-stat) set for 204/198 on/off low speed, and 218/214 on/off for high speed because at the calculated lower settings the fan ran almost all the time.

Does your tuner let you set the fan off temperature, or does it do that automatically and invisibly when you select a turn on temp?

are 180 degree thermostats factory? my jeep 4.0 has a 195 degree tstat it runs at 210-220 degrees, but thats just how the jeep 4 liter engines are. since my stang gauge doesnt display temp (only shows hot or cold) i really dont know how hot it gets. so i used my tuner to put low speed fan at 185 and high speed on at 200.

As I said above, the factory t-stat is a 195°F unit--that means it starts to open at 195°, not that it keeps the engine at 195°, It is fully open at 219° according the Ford specs and will keep the engine around 210° to 215°.

Setting the fan on temps as low as you have, with the stock t-stat, will just cause the fan to run more and shorten it's life as it and the thermostat battle for control of the engine temp. However if you drive mostly at speeds of 40 mph+ it won't matter because the fan won't run anyway...
