I got a 98 coupe with leather seats and I'm pretty sure you have to get down at the base of the headrest (inside seat). The leather around the headrest mount is loose and it looks like you can slide a flat screwdriver or paintscraper down to its base to pop the HR out.

I did this on my 2002 GT to put in the Halo Headrests from an '86.
Pull the headrest as far up as it will go.
Cut open a wire coat hanger and slide the striaght piece down the groove on the front of the headrests shaft. (It may be easier to go under the plastic trim piece.)
Slide it down along the groove until it stops. (about 6-8 inches, If I remember) Then shove it sharply downwards and you'll feel a click. The head rest should slide right out. (you're releasing a lock button with the wire.)
BTW: if you are replacing the stock headrests with older ones like the halo style ones from the 80s, you'll need to pull out the plastic sleeve that is inside the headrest shaft's track. The sleeve is used to reduce the size of the track for the newer, smaller, headrests.
