My car is turnung off...

Yea, my car turns off as if there is a lack in fuel. It will fire up fine. It'll drive fine for a few minutes, but a few seconds after idleing at a stoplight, the car will go as low as 100-200 rpms but not fully shut-off. After I pump the gas pedal about 3 times, about 3 seconds later the car will revv up to about 2k. Then I can drive a bit and the same thing keeps happening. Once the car turns off on its own, I'll have to wait about 5 minutes, turn the key to the on position as if to pump the fuel pump about 3 times, fire it up and I'll be good for about 5-10 minutes before it continues what I mentioned before.
I replaced my fuel pump to a Walbro 255lph about 4 months ago.
I replaced my fuel filter last November.
I pum good fuel as well. Mobil Chevron and Shell.
Can anyone tell me what may be going on & if you have any questions to further my explanation.

Time to troubleshoot I guess.

The IAC sticking/sluggish should not cause the engine to die while driving, not should it interfere with starting as you describe.
I would monitor the fuel pressure, it could be a problem with the fuel pressure regulator--check the vacuum line to the regulator also.
I am also curious as to why you installed the 255lph pump, and will add that I have seen that pump in particular overwhelm stock FPRs on return type systems, and cause them (the FPR) to fail. I have not run into this on a Mustang, but then again I have not had much to do with the pre-1999 models.

To be honest, I went with the Walbro 255 because it was $95 shipped brand new from ebay.
Now, how can I check the fuel pressure regulator? Should I purchase a new/better one? Also, my car never died wwhile I was driving, I jus reduced my speed and turned the engine off.
To add to my explanation, last night I decided to turn my car on and drive it. It was completely fine after driving for about 20 minutes through the city. I decided to give my car a good run. In 1st gear I drove up to about 4500 rpm, double clutched gunned--2nd gear wot & 3rd as well. BUT, when I was at about 4800rpms on 3rd geat, still WOT, a deep "TOOF TOOF" from the rear I heard; as if I had a huge misfire or something. I instantly let off. wth!
Additionally, yesterday when the car was giving me trouble, it was about 113 degress out. I never drive my car in that weather because I don't have a/c and I cannot stand 105degree+ weather. Was the heat be a contributor to my issue?
I have a 2004 gt engine with approx 35k miles. (Though I should state that)
