The SOHC which are in the GT's means single overhead cam and they have 2v's per cylinder (one intake, one exhaust). The mach and cobras have a DOHC engine which means dual overhead cams and it's also 4v's per cylinder (two intake, two exhaust). Whoever told you the SOHC's are better is wrong.

SOHC = Single Over Head Cam
DOHC = Dual Over Head Cam
1 engine takes 2 cam's the other takes 4?
If DOHC , usually 4 valves per cylinder, 4 valves x 8 cylinders = 32 valves total
If SOHC , usually 2 valves per cylinder. 2 valves x 8 cylinders = 16 valves total
