Default Coolant light acting up

My coolant light has been coming on for a couple weeks now but only on certain occassions. First off, my coolant level is not low and it is where it should be. Also, there's no random coolant laying around in my engine bay so there's no leaks. Here's the weird thing. The light ONLY comes on when I am driving on the highway doing 60+ mph and stays on until I either slow down or drive city speeds, 35mph or slower. Anyone have a clue on whats going on? Should I change my coolant, coolant temp sensor or what??? Thanks.

Thanks Lizzy. Had a hunch it might be the sensor but wanted other peoples opinons on it. Guess I will replace and see what happens.
