While you are doing the job you could replace the spark plugs and cop boots. Do a coolant flush and clean the top side of the heads real good along with the throttle body and injectors. As far as going with the performance intake I wouldn't do it unless I had the money to go with a larger tb, injectors, and fuel pump. Thats my 2¢ maybe someone else will chime in.
already decided to just replace with the ford racing piece, it's ordered and on its way.

BEFORE you do anything, you will need to empty out some coolant out from the bottom of the radiator. To do this, use a 19mm socket and locate the drain plug on the passenger side of the car. Loosen the plug a little bit and let about a gallon or so of coolant drain out (I don't know if less would be OK but I drained out more to be safe).

Today I was able to remove the thermostat housing to get to the thermostat and the old rubber o ring that was on it.

The housing was stuck but what I did was take a flathead screwdriver and a hammer/mallet and tapped at the base of the housing. Eventually, the housing broke free from the intake manifold.

I replaced the old o ring with a new one (costs a few dollars if that).
