If the head only stripped you could probably use vise-grips to get it out. Just don't reuse it.

You're going to have to use one of those kits that drills it and allows another bit to grip and un screw the bolt

You can tap the oil pan with it in the car, to remove the oilpan with the pickup tube screwing with u, ur probably going to have to remove the k frame to drop the oil pan anyone. Just drain the oil, tape the front of the pan (use alof of grease to catch shavings) when installed run some oil through to push out any shavings that are inside the pan, then plug it all up and fill her back up with oil.

I wish you the best of luck with this, i really do.

The boost gauge needs a manifold source, so it sees vacuum and boost

A wastegate, that works by bypassing exhaust gasses around the turbine blade, it uses a combination of exhaust back pressure, spring pressure and manifold pressure to determine when the valve is opened/opening/or closed

And i might suggest, DO NOT try and cheap out on things like a wideband, that thing is telling you if your car is living or dying....

does this on3 kit come with a handheld tune? Are you getting it tuned?
