Depends on how clean you want the inside to look after you gut it.
I did it because I didn't want the ugly bare bones look when I gutted my last track car.

I had one in mine. I got sick of people always trying to bum rides of me. "Sorry, I only have 2 seats" fixed that quickly. Plus it made a nice little secret storage compartment in the backseat wells.

The rear seats and their brackets weigh probably around 50lbs. They're not hard to take out/put back in.

The rears (in leather) weigh 34 lbs total.

Definitely take them out & everything else you don't need. Even little pieces & parts add up to pounds. Weight kills at the track. Don't know which kind of track racing you're doing. If at the drag strip it really kills you on the launch, plus you have to accelerate all that "extra" weight for the entire 1/4 mile. At the road course it kills your lap times twice both when you accelerate it and also when braking. You have to start braking earlier when your car's heavier & it just slows your lap times that much more.

I assume that includes all the mounting brackets. It's been a while since I've touched a Mustangs rear seat....

There's also a lot of sound deadening material in the trunk/back seat trim panels that you could take out. Every little bit helps.

Yes, that includes the brackets. I made sure to weigh stuff as I stripped it out so I could keep track of her diet.
