Default Weird Mustang Overheating

Hey guys I am having a little trouble out of the Stang randomly the other day. The car has only 80k miles on it. Basically I was just sitting in a parking lot with the AC on and all of sudden my car jumped into the red on the heat gauge and coolant exploded out of the reservoir via the pressure cap. The car has done it a few times now, but it seems it drives fine up until I turn the AC on. The gauge stays in the middle and can tell when the thermostat opens up via the gauge also. I have replaced the thermostat, belt, and temp sensor. A few other weird things I was noticing. Apparently my radiator fan keeps blowing the fuse, so it doesn't work, and also when my cars AC kicks on the AC compressor bogs my engine down way below idle; almost cutting the car off. At first I thought it could be a head gasket with my luck, but considering the mileage im hoping this isnt the case. Is it possible that the AC compressor could put enough strain on the engine to cause it to overheat; in conjunction with the fan not working of course. Any help/advice will be greatly appreciated. Thanks!

Additional info: 2004 Mustang GT, the car doesn't appear to "gradually" heat up, rather jumps pretty much from middle to high in less than 5 minutes

Any time the AC compressor kicks on the fan will kick on high as well. So if your blowing fuses I suspect it is something in the fan schematics causing your issue.

You could have a bad fan motor, or a failing relay , possibly even a bad ground .

Would this cause the car to overheat though?

Yea if your fan is not running at the proper rpm . or putting excess drag on the system.
