my buddy has a either a 00 or 01 yellow mustang GT. The thing is, the inside of his seats (front and back seats) are yellow leather, and still sport the Ford Mustang symbol on them.

My question is this, Was that a trim option? Did they just do this on yellow mustangs? what about any other colors that it was available in? I am just curious why I don't see many mustangs with the special seats around.

I've never seen/heard of that coming from Ford.

Only thing I can think of similar are the 10th ann. Cobra Seats with the red inserts.
