Don't you just pull the throttle cable and lift it up through some kind of hole in the pedal assembly?.... Its been a while since I installed my pedals... But I don't think this was anything I had any issue with.

the top of the pedal is shaped like a.... a fork I guess. There is a round plastic fitting right there that the cable goes through. Pull the plastic fitting up and out and that's is.
