I've seen guys complaining that their 750hp crate motor just doesn't feel powerful to them anymore, they're trying to figure out how to get to 900hp.
Simple fact is that you'll always get used to how much power you have and it will never be enough. In a perfect world your car would just have more and more power the harder you push the pedal (to a limit of infinity). That's why I've given up for the most part on trying to make tons of power.
I've had more powerful cars in the past, but in recent years went back down to a 1.6L Miata (120hp). Then a couple of years later to a Lancer Ralliart (162hp), now to my GT (260hp). With each upgrade I was blown away...for about two days, then you get used to how much power you have. Now I have to look at the speedo climbing quickly to remember how fast the Mustang is (because don't kid yourself, it's a very fast car, even stock).

Having goals for your car like running certain times at the track is more constructive IMO than just shooting for a good dyno number. You can have a lot more fun that way when compared to just bolting a bunch of parts together looking for a cool dyno graph. Racing takes a lot of practice to be good at it, and most of the time the car will be capable of much more than the driver. Just having a powerful car will lose it's novelty after a while if you aren't using it for what it's built for.
That being said, racing the same car with the same setup can get old, but there are more than one way to improve your times than just adding power. It takes a lot more than just raw power to run well at the track.
