You say that a 315 is perfect for an 11" wheel, yet you drop an inch off of the width of a wheel and say run an inch and a half less tire? On an 18" wheel, I would not do it. I was going to trade for a set of black 17x9/10.5 wheels back when I had my TSW's, but the front and rear all had 275 width tires on and it looked absolutely horrible. I had 285's on a 9.5" wheel and it was a perfect fit. No stretch, no bulge, just perfect. 295's would be a perfect fit on a 10" wheel, and if I'm not mistaken, jazzer you run a 305 on your front 10's, correct?
You saying a 275 is 1/2" narrower than a 315..? A 275 is rated for a 9" wheel, just found them to be sloppy on that width as the sidewalls bulge too much on most tire brands.
I run 295's up front on my 10"s, but really should have gone 285's. The R888's have a very stiff sidewall that curves inward off the rim and can actually see the top edge of it before it curls back outward again. My wheels are pretty exposed and DD my ride, so I accept just a bit less turn-in response as a result. Most street tires have a sidewall that comes outward off the rim and curls up/over to the top of the tire. This will protect the rim edge from curbs and such, while making a nicer, more comfortable ride.
I don't know that I would run a 275 on a 10" wheel, just saying that I have found it would be a nice fit and certainly rated to fit one.

Well here's another dilemma I have, rotating aside (although it has helped me as I tend to wear my rear tires faster haha) the tires I want are not made any bigger than 275 in an 18" wheel. I have been looking around, and running a staggared set as large as I would want really limits my tire choice. I was going to run a true summer tire, but they're more money, wear faster and force me to put my winter tires on early when it gets cold, so I think I want to stick with all seasons.

Ok, I run 275/35/18s on all 4's on my 18x9 saleens. Honestly, the only regret, is that I wish I had a 10 or 10.5inch wheel in the rear. The 275s are more than fine up front. I've never had any rubbing issues. Even the 275s out rear look nice but I intend on selling two of my wheels to pickup 2 18x10s so I can run a fatter tire on the rear in the future.

The Continental DWS all seasons are made up to a 295/35-18. Those are going to be on my current wheels once I get other wheels for summer duty.
Jazzer, I do not find 275's an adequate width on a 10" wheel. One would need AT LEAST a 285 width to have proper fitment in my highest opinion.

Well, if the OP ends up on getting staggered wheels, then he won't have to compromise on a single tire for all four wheels.
Mustangs always tend to have a tire that is designed to fit a wheel that is .5" bigger than the actual wheel.
My 2000 245/45 17x8 stock tires are meant for a 8.5" wheel
A 03/04 Cobra 275/40 17x9 stock tires are meant for a 9.5"
But if you go staggered, keep the same train of thought for the rear tires, but reverse it
for the front (drop down from 9.0" to 8.5")
