Default SIs this worth it?

My 2006 GT is a daily driver so there will be no racing, and I don't care about top end. I am a 0-60 quick acceleration guy. However, I do a lot of highway driving. I can't do 4.10's because I'll be doing 65 on the highway with my rpms at 3k. So I am thinking of doing 3.73's. Is there a noticeable difference? And how much and how long does the install take? Thanks in advance!

With 4:10's I am running out at 2500rpm at 70mph
