Oil Change - Got me Nervous

I'm just concerned if it was a synthetic oil and i switched to standard - would - could this cause issues? I'm still waiting to hear from the dealer - if I don't hear from him soon, I"ll just make a decision and go from there.

It won't hurt anything. Just buy the Motorcraft syn blend 5-20 and a FL-820 at Walmart.
I change every 3K...no matter what oil used. That's just me and I'm ****
Do Not want to make a pissing match here!! Don't get caught up in the oil debate.....which is the best and only to use, etc.
Also, when you check oil level, if you just shut it off, give it 15 minutes or so to get a real stick reading.

first number is the viscosity/weight of the oil in cold weather (winter), thus the 'W' on the first number.
Second number is the viscosity/weight of the oil when it's at operating temperature (meaning motor temp)
5w-30 vs 10w-30
5w-30 has higher flowability at lower temperatures than the 10w-30 but it's the same for both at operating temperature.
Since we're no longer in summer, it's not such a big deal. If it were here in AZ during the middle of the summer I might complain about 5w-20 vs 5w-30...but not in other places of the country.

I have a 2007 GT and I've been having a problem with the oil level reading low on the dip stick even after an oil change. This occurred when my dealer changed the oil and also when I changed it myself. I put in 6 qts, level the car, check it hot and cold, and depending on which way I put the dip stick in (rotate 180 degrees) the oil level either barely touches the bottom of the dip stick (below the first hole) or is right at the first hole.
Currently using Mobil 1 Full Syn, but this happened when I was using Motorcraft blend. Using the right size oil filter, etc. It's driving me crazy. I'm now wondering if the wrong dip stick is in my car. The dip stick has yellow handle with ring, has the twisted shaft, and riveted shaft. I noticed slight bend in dip stick and straighten best I could. I think this attributes to the two slightly different readings I get, but either way, the oil level shouldn't be this low.
Has anyone experienced this or any suggestions?

5w20 is used for 2 reasons... VVT can react funny on a heavier weight oil and the bearing clearances inside the engine are a lot tighter in newer engines so they need thinner oil to properally lubricate those surfaces.
