FI - better fuel efficiency, better power over full RPM range, no periodic adjustments
Carb - cool factor (maybe?), need to reprogram engine computer (can you say 'failsafe mode' as soon as the MAF, throttle control sensor, etc. start pumping out bizarre signals).
If you really want to go carburetted, I'd suggest a crate or purpose-built motor and professional build. It won't be cheap.
In short, there's no easy way to do it with the stock engine, and why would you want to?
