what do the aftermarket control arms do that the stock ones dont? and also why would you need to adjust a control arm? Why do they sell uppers if they "dont do anything"?

I bought these. Work great and fit very well. Not overly priced either. Mac knock-offs.

If you lower your car it may be a good idea to get adjustable uppers to set the right pinion angle...

Upper control arms help hold the axle in place side to side
and control axle rotation.
Lower control arms push the car forward.

Planning on getting the maximum motor torque arm
myself that changes it over to a 3 link design

Also, panhard bars are highly recommend to help
hold the axle in its side to side location.

Check out Maximum Motorsports web site.
they have tons of info on what their products correct
and have different "kits" for different applications and
budgets

how do you know what the right pinion angle is? I also just read Do NOT use urethane bushings in the upper arms to improve the side to side motion of the axle and it will bind up the suspension, anyone heard of this?

By using either a protractor or a specially made gauge.
