I have the rack & steering shaft. Be advised, these types of steering shafts may rub a header tube depending on motor mounts and headers used. I had to grind down the set screws that hold the upper u-joint togeather for clearance.

The thing about manual sttering, no matter what tires size is... it's going to be "harder" to turn the wheels if the car is setting still. If it's moving there should be no problems. Is it a big deal? To me, no.

I had a 64' chevy PU with manual steering, 350 smallblock, 60's in the front and a 10" octagon wood wheel. Not my choice of wheel, it had a vette engine which was the only thing I wanted off it. Unless yer really small no prob. I'ts only goin to strain you if you crank em sitting still.
