I have an 88 gt I'am building but I don't know weather to stay with the speed density or convert to mass air flow, which is better & why?

Convert to mass air. Basically, speed density uses vacume measurements, and sensor inputs to determine what the timing advance and injector pulsewidth should be, and when you do performance modifications, speed density has no way of knowing there is more air and fuel needed.

Mass air actually meters the air coming into the engine, so that it can correct the air/fuel ration based on the air flow, rather than just some tables and graphs in the computer.

yup. the only time I would disagree is if you have an aftermarket controller and you are controlling the adjustments yourself. Otherwise, stick with the mass air system.
