Would the ride suffer some? Like cornering and stopping? And how much hp can the 351 block handle?

Geez... There is quite a few Mustang guys in MD. Hmmm, well a good place to look at, that is cheap is Crazy Rays. They always have some goodies, either for my Mustang or my 280Z...

Oh and I also want to know, what the true weight difference is. That was one of the main concerns, that was holding me back...

Most likely you will not feel that much of a difference in weight from the 351W. Like ^^ Said, its about 65 lbs... maybe a little more but not alot at all. Also, a 351W block can take about 600rwhp but anything after that you need to be careful. Thats only with 74+ blocks. Pre 74 351W blocks can handle close to 700rwhp.
