Water temperature!!
AGAIN! I am ready to blow my head off. After all of the installation of cooling crap last week and the car seemingly running PERFECTLY for a week, now I think I may have problems again... or maybe I'm just looking for things to worry about.
Can someone recommend to me a good ELECTRIC water temperature guage that is easy to install and won't break the bank? I don't want to have to take apart half of the car, maybe install it in the stock location? Can someone explain how to install one without needing to drill or tap or is this necessary?

I have a 180* tstat
I also have a brand new 3 core radiator, and I ALSO have a proform electric fan blowing 2800cfm and Goodyear hi-miler hoses all around except the one to the heater core.
My temp guage is acting REALLY weird, and I'm almost sure it's not giving accurate readings. It started jumping today from ice cold to normal temp and back and forth, and my fan stat was set @ 200- and the fan started going on at like 150 according to the temp guage, and I'm pretty sure the car wasn't that cold.

i have an autometer gauge, im shure summit has cheaper ones that work just as well, call them and ask.. there great to me! i would say its your gauge not your car you have a good setup

Well, that's what I figured too. The guage is totally freaking me out. After all of this work I don't know WHY the guage would crap out on me.
Another weird thing that has me worried is that I had oil yesterday, but when I was leaving work today I had to put a whole quart in (I could have put about 3/4 but didn't realize it). It's never EVER burned that much oil before.
I THINK I checked it yesterday. I'm gonna take the car for a 25 minute drive and see what happens.
How much was the autometer guage and how did u install it?

combo of oil and coolant means header gasket in most cases, are you getting any coolant in your overflow? chances are that your stock guage is bad (common on these) and the oil may be attributed to a leak? did you check the oil w/ the motor hot or cool?
Autometer temp guages are 40 bucks at summit, hook into the temp sensor and are very accurate.

Yeah, I'd second the compression test if you say the gauge is acting 'Really Weird' and the stuff you're describing sounds like it could be a possibility.
Do a compression check and check for cylinders with obviously bad numbers - side by side cylinders with no compression would indicate a breach in between those cylinders.
Did you get all the air out of your cooling system? That can cause high and erratic gauge readings.
Do you have bubbles in your radiator or the obvious oil in the coolant?
Do a compression check - it's free and it'll eliminate that as a possibility.

Compression test will tell you if the HG is shot.
A pressure test of the cooling system is also a good idea for your problem.
I would start with the pressure test cuz it is easier.
Any coolant temp gauge from your local parts store will give decent readings. Probably 15-20 bones, and you won't have to mount it in the car. I have an autometer mounted in mine and like it. I used the stock wire and spliced in behind the dash. I mounted the temp gauge next to the oil press gauge in the vent pod in the middle of the dash.
Look around the engine for bad grounds. Make sure the ground strap at the back drivers side of the block is in good shape and mounted securely to the firewall.
There should also be a ground from the bat to the front of the block somewhere.
Bad grounds can do crazy things to sensor readings.
