I also know about the block not being around for the long haul and a friend of mine that's a mechanic is pricing out a 331 stroker for me.

The pushrod length is determined by how radical or mild a cam you go with, right?
with what block?

As for the pushrods, just buy them from the cam supplier, that way they match the cam, because you are right.

You usually only need custom length pushrods if youre running a solid cam or if youve had machine work done to the heads.

So no 1.7's and call Jay about the cam, huh? So the custom grind cam won't need different length pushrods because my cam won't be a solid one, and I'm not getting head/machine work done.

It also sounds like whoever I get to do the cam, should be the one to supply me with the pushroads as well. With the RR's, it almost sound like the 1.6RR make more sense for my street application, but now I'm confused about the 165 or 185 heads.

I would get the 165's for a nice street car... it will match with your manifold also.

Also, did you ever consider adding more boost? with a crank pulley, power pipe or blower pulley?

Sure did and a power pipe, and crank pulley was my next plan after heads/cam.
