id get a 160 thermostat before going without one. 160 would prolly be your best bet in summer/ spring driving whats weather like by you?

Not a good idea.

Why do you want to run without a stat?
Are you having temp issues?

It looks like a fun project you have going.

Colder coolant temps are not always better. You want the coolant to be between 190-205F, depending on who you talk to this can flex a little though.

Engine temps below 180F greatly accelerate cylinder bore wear. As the temperature drops, cyl bore wear increases rapidly.

Also, an engine will make more power once the coolant temps are above 180F.
Warmer oil will thin out, decreasing losses through the oil pump.
A hot combustion chamber will help to vaporize the fuel. This leads to more complete combustion, yielding more power and economy.

Since this is a new motor, I would go with a 195F stat. If you don't have any deficiencies in the cooling system the stock stat should work very well.

If your temps start getting too high (like over 220F) then switch over to the 180F.
It would be better to upgrade cooling system parts instead however.

Keep in mind that the temp of the coolant is of primary importance. The rating of the stat is secondary.
If the temps in your part of the country are 100F or higher, then using a 160F stat may be the only way you can keep the coolant temps close to 200F.

Good Luck,
jason

you need the engine temp up so the computer will run in closed loop. if it doesnt heat up it will stay in open loop and wont run right. run a 180* at the coldest
