Default cooling bug

well i have about 800 miles on the new motor now and since i've had it i dont think its been over 180 degrees, usually sits around 160-180. i will explain. first off it's a new block, 3 core aluminum FRPP radiator, 180 t-stat and i believe a new "autozone" high flow water pump. now since i've been driving the car, i've been really good about trying to let it get warm before she leaves the driveway. the only problem is that she never warms up. keep in mind i'm using the stock gauge to read this, but just yesterday i installed a new junkyard e-fan and it's being turned on by a 185 degree thermal switch. well i took the old clutch fan off and installed the new one, and tried to warm her up. let the car sit for about 5-10 mins and no fan turned on. i know the thermal switch works (i tested that) and i know the fan works (tested that too) but even after driving the car around i couldn't get the fan to turn on, let alone get the temp up. the 3 core couldn't be cooling that well could it? even in the drive way? do you guys have any ideas on what could be happening? i'm so lost.

First off, I think it takes forever for a motor to reach operating temperature while just idling. Second, you may want to get an aftermarket water temp gauge. Maybe it's reaching 180* but just not 185*. My car runs pretty cold too--the stock gauge never gets above the second line from the bottom since I installed a new oem radiator. Normally, the needle is halfway between the first and second lines from the bottom. I'm gonna get aftermarket gauges within the next few days, so I guess I'll know for sure.

oh man... glad to see there's other people out there with this happening. i'm in the middle of getting funds together to buy guages for my car, i know water temp is going to be #1 on the list. thanks for the replys guys and i'll ckeck the t-stat later to see if that's the problem... maybe i'll go back to the stocker.
