i believe that allowing for the air to travel further before it gets into the intake manifold allows the air to be somewhat cooler. that would probably also be why high rise manifolds would serve the same purpose and also would allow pressure to be built up before introduction into the motor. thats just what ive heard from various people..

It tricks the plenum into thinking it is bigger than it really is which helps the airflow like NOS says, the really tall high rise intakes have a straight shot to the back of the intake valve with no bends at all.
and vfast, it will keep heat off the carb if it is not made of metal, I've seen some made of plywood and varnish at the strip! LOL
