Also, That V3 stuff comes in a gallon, you paint it on. Would that stuff be good to use under the car as a rubber coating...I don't know if anyone looking at this post will know about undercoating a car but I am starting another post about that...Just wondering..thanks...

I always used rubberized underbody spray and it worked good on the flat metal, but I would still go with dynamat or something simular.
On those open areas, you should just stuff them with some type of filler...pillow stuffing maybe? That would help quiet it down if you use sound deadener also.

IMO the spray foam is not a good idea as it could trap moisture and cause rust. Dynamat will do the same thing unless you make sure the area you put it over is cleaned of any rust and then primed and painted first. Why not just Dynamat the back of the interior panels for those open areas you posted? It won't make a total air tight seal which is good because the moisture can escape, but it will cut down on road noise.

thats a very good idea...putting it on the back of the panels. When i removed the factory panels there was some type of insulation behind them, maybe I will just stuff the that in the open areas, dynamat the rest and the back of the panels...should do the trick? Thanks, Nick

If it is getting wet, you are going to have rust problems anyway....it should not be getting wet at all. Stuffing them will be okay. Dynamat only one side of the steel, it would be a waste to do both sides.
