Default To deck or not

Soooo,

I have some GT-40 heads off an explorer not yet installed. I've heard I should get them decked first (I think someone here said that once, not to me specifically). So, should I? I don't know how many miles are on them (off a 97 I believe). Is there anything I should know about it before I find a place to get it done (if I decide to)? I've never delt with heads before. How expensive is it generally? I was thinking about a port and polish too while they were off, but decided not to because I'm trying to be relatively cheap (but not so cheap as to make my engine explode). I may do a polish, but porting requires new valves, right?

Anyway, thanks for any help.

Cylinder head warpage limit, as per Haynes repair manual:

.003 in in any 6 inches, or .006 overall.

Make sure the surface is clean. The only tools you should need are a straight (and I mean straight) edge and a thickness guage.
