How about...

Delete A/C
Delete Power Steering
Remove Rear seat
Remove spare tire & jack
Aluminum Heads (lose weight and gain horses)
Aluminum Driveshaft
tubular K-Member
tubular front control arms
coilover conversion
Lightweight battery
and thats all I can think of right now...

+1 to everything OJ said.... doing a tubular front end with a fiberglass hood and relocating your battery alone will shave off about 140lbs off your front end. Delete your PS, AC, etc. and get aluminum heads you are looking at 200lbs. As for interior, taking out the spare tire & jack and deleting the rear seat is as far as I would go. And possibly racing seats. Not worth the 5lbs to delete door panels, etc. I rather have a clean interior + 20lbs than a gutted car. Just my opinion...
