Yet another gear question

Yet another gear question
Since gearing does is not necessarily cut and dry, I figured I'd post the specs on my new engine on order and see if I can get some gear recommendations. The vehicle is a '65 fastback w/9" Currie rearend, World Class T5 and the following engine.
Currently, the rearend has 3.00:1 gears because the previous 351 that I just pulled had so much low end torque off idle that it was tough to keep the tires on the ground and those gears were recommended. I'm thinking that it will need a lot more gear with this new engine but am not sure how low to go. Mostly, this will just be a weekend warrior and I don't drive as hard as when I was young (and invisible ), but I will still get on it on occasion.[8D] Besides, I think it just will be a drag with the current gears. So, any recommendations based on the above?
Thanks!
375hp @ 5500rpm and 395ft lbs of torque @ 4500rpm. This engine has a rough idle with enough cam to give it that muscle car sound but is still mild enough to be reliable for that everyday driver or restoration project. This engine should be used with a 2500 stall speed convertor if being used with an automatic transmission, and a 650cfm to 670cfm carburetor is recommended. This engine runs on leaded or unleaded premium pump fuel.
