I have the proform fan with adj thermostat at the top.

180-240 its at 180. I also think my gauge is messed up because when i hit the fan with my manual switch the temp gauge goes up. whats up with that

maybe you have the fan set to push, and your pushing hot air instead of sucking cold air

at any rate, a radiator temp of 180 will produce an engine temp of about 195, expect around a 15 degree difference at any temp.

Doesn't one of the under drive pulleys bolt to the water pump? And wouldn't that cause the water pump to turn slower?

I'm thinking you got several factors goin on here. One, the water pump is not turning fast enough. Two, that 2-row radiator isn't helping either. Three, does the fan have a shroud around it? You said you switched to electric fan right? It still needs to have a shroud around it to help pull the air through the radiator.
