make sure the entire rear end is off the ground...

try rotating the driveshaft and note how far the tire turns... instead of noting the axles turning

try centering the valve stem straight down and rotate the driveshaft 3 times....

if the valve stem go around and passes the center facing straight down, youve got 2.73's. you SHOULD be able to figure it out easier if you turn the driveshaft, not the tire

Here's the best way to do it, IMO:
Rotate the tire until the valvestem is at the very bottom (or top, whichever you prefer). Make a mark with chalk/whiteout/something on the lowest portion of the driveshaft. Turn the wheel 10 full times (more accurate) and count the rotations. Better yet, make someone else do it. 3.73's would make the driveshaft rotate 37.3 times.

In any normal case, yes. When you want to distinguish between 3.90's and 4.10's (the mark is always out of sight) it makes it easier. Not impossible to use an estimate of where it is, but might as well be sure for the extra 1 minute it takes, methinks
