You'll need new heads w/ either (if you don't already have a set) and to upgrade your fuel system (24-30 # inj's if N/A, fuel pres. reg., 190-255lph pump). The 351 will be cheaper initially (depending how much work it needs, if any), but you'll have to buy different headers and intake. It will hold a lot more power though.
The 331/347 will use all of your bolt-ons, including the intake, but you have to pay for the stroker kit and possibly installation or buy one from CHP, etc.
Personally, I would go the 351 route.

If you already have a 302 you'll need (at a minimum).........
1) 351w/FOX oil pan and pick-up.
2) 351W distributor
3) Headers for 351W into FOX body
I think that the 347 stroker is a good way to go as the whole 351W dressed will end up wieghting about 60-70 minimum over the 347 and remember, it's on the end of the car where you don't want extra wieght..........
