Seems like a silly question, but outta the 4 stangs ive had this is only 1 with an electric fan in it. How hot is it ok for the car to run with a 190 degree thermostat? with AC its going to 210 and driving me nuts with worry. Can some1 please help me with this issue? Any help would be greatly appreciated

That seems a little hot, normally these car shouldn't go over 200*. Good rule is you want your car to stay between +5 and -5 of what your thermostat opening temp is. It soulds like the fan isn't setup to run at all times the ac is turned on. You could wire it up or ditch it for original fan clutch setup.
