basicly when the cam isnt trying to lift that valve, i usually just spin the motor over by hand until i see one of the cylinders with both valved completleyclosed then i adjust those 2 rockers on that cylinder then just repeat that for the other 7

I know the twisted wedge heads use a unique angled guide plate but if the high ports are a inline valve set up you might want to check trickflows website and check the specs on the guide plates they use/ reccommmend and match them to any aftermarket ones similar in spec

start at number one cylinder on top dead center and then you can adjust the rockers on theat cylinder and then rotate the motor over to the next cylinder in the firing order = #3 (I use a small light to shine in the spark plug hole to see when each piston is at TDC and then you can set lash on both rockers on that cylinder and continue around to each one in the firing order after #3 would be #7 and so forth

no the guide plates are what keep the roller rocker from walking/centered on the valve stem tips ...otherwise they'll fall off to the side!!
