Was the radiator full when you took the cap off? where exactly were you looking for water to come out?

lol this car has been nothing but trouble for the past 3 months haven't driven it but twice, but i love coming home from school and having that piece sitting their ready to be worked on!

it was full, and i was looking for something to come out, and nothing did. The car had been running and was at operating temps

where were you expecting something to come out of? A normal operating system will not have coolant to come out just because the cap is off.

you should have gotten a bath in hot coolant if you removed that hose with the engine running, don't ever do that again!!!!
if nothing was coming out then the thermostat was stuck closed. get a new one and have the radiator and engine block thoroughly flushed out before you replace the stat.
